Ensalada de Pepino
WHAT YOU NEED
- For dressing
- 1/4 cup Cacique Crema Mexicana
- 2 1/2 oz Cacique Ranchero Queso Fresco
- Juice of 1/2 lemon
- 2 tsp olive oil
- 1/4 tsp dill
- Salt to taste
- For Salad
- 1 English cucumber, sliced thin
- 5 oz corn
- 1/4 small red onion, chopped
- 1 serrano pepper, chopped
- 4 oz smoked salmon
- 1/2 avocado, diced
HOW TO MAKE IT
- Add the dressing ingredients in to a blender and blend until smooth. In a large serving bowl, mix salad and dressing until well combined. Top off with everything bagel seasoning and serve.
