Two Cheese Ripe Plantain Casserole
WHAT YOU NEED
- 5 ripe plantains (leave the skin on)
- 3/4 cup of water
- 6 ounces Cacique® Cotija cheese, crumbled
- 8 ounces of Cacique® Panela cheese, sliced
- 4 tablespoons butter
- 1 cup bread crumbs
 
                                                                            HOW TO MAKE IT
- Wash the plantains well and cut in half. Boil the plantains for about 25 to 30 minutes. Set aside and let them cool until safe to peel.
- Preheat the oven to 350 F.
- Peel the boiled ripe plantains and place in a food processor with the cotija cheese and 3/4 cup of water. Puree. Transfer the puree to a baking dish. Top with panela cheese and set aside.
- Melt the butter in a sauté pan and toss the bread crumbs to coat. Top the plantain mixture with the bread crumbs. Bake for 30 minutes.
