Cacique® Jack-O-Lantern Quesadillas
Carving pumpkins is fun, but it’s a lot of work! If you need a mid-carving snack break, these Jack-O-Lantern Quesadillas are an easy, festive and delicious option. First off, tortillas are much easier to carve than a pumpkin (and you can eat the scraps). The only smiles bigger than your quesadilla carvings will be the ones on your family’s faces when they take a bite of gooey, cheesy goodness. Use a sharp knife to cut out a pumpkin stem at the top of all of the tortillas. (This can be done ahead of time & then stored back in the tortilla bag until you are ready to bake.)
With a knife, cut a jack-o-lantern face out of 4 of the tortillas. Then preheat your oven to 375ºF.
Place 2 pumpkin shaped tortillas each on 2 large baking sheets. Make sure they do not overlap.
Spread about a cup of the shredded Cacique® Organic Queso Quesadilla on each tortilla. Top each one with the jack-o-lantern face tortillas.
Bake in the preheated oven for around 5 minutes, just until the cheese has melted a bit, and the tortillas have started to brown.
