Baked Queso Fresco with Poblano and Corn
WHAT YOU NEED
- 4 ears of corn
- 1 Cacique Ranchero brand Queso Fresco
- 1-2 roasted poblano peppers
- 1 bunch of cilantro
- 1 shallot
- 2 tablespoons honey
- 1 teaspoon chile lime seasoning
- ½ teaspoon salt
- ½ teaspoon paprika
- Black Pepper to taste
- Generous drizzle olive oil, plus a bit more
- 1 lime cut into wedges

HOW TO MAKE IT
- Finely chop poblano peppers, cilantro, shallot and cilantro. Add in corn and all seasonings to a bowl and mix.
- In a large pan or skillet, place Ranchero brand Queso Fresco in the middle of pan and pour corn mixture around.
- Drizzle with olive oil, salt and pepper on top of Queso Fresco and bake for about 20-25 min.
- Then turn on broiler and cook for about 10-15. Serve with lime and tortilla chips.
