Black Bean & Queso Fresco Air Fried Tacos
WHAT YOU NEED
- 1 15oz can refried black beans
- 1 10 oz Cacique Ranchero Queso Fresco, sliced 1/4” thick
- 8-10 corn tortillas
- Cooking spray
- 1 cup green salsa
- 1/4 chopped cilantro
- 1/4 cup chopped onion
- 1/2 avocado, diced
- Cacique Crema Mexicana, for garnish
HOW TO MAKE IT
- Warm up the beans and set aside. Wrap the corn tortillas in a paper towel and microwave for 30 seconds to make them pliable.
- Spread a spoonful of beans on one side the tortilla and add a sliced of queso fresco. Fold it over and secure the taco with a toothpick. Repeat with the remaining tortillas, beans and cheese. Crumble the remaining Queso Fresco and set aside.
- Place the tacos in the air fryer basket (work in batches if necessary) and spray the tacos on both sides with cooking spray. Cook at 375ºF for 8-10 minutes or until golden brown and crispy.
- Mix the green salsa with the chopped onions, cilantro and diced avocado.
- Transfer the tacos to a serving plate, remove the toothpicks, and generously drizzle with Crema Mexicana, top with crumbled Queso Fresco and avocado salsa.
