Grilled Watermelon Pizza Pops
WHAT YOU NEED
- 1 round slice of seedless watermelon, about 1-inch thick
- 8 slices Pepper Salami
- 1 handful of fresh basil leaves or a salad mix of your choice
- 1/2 cup Cacique® Crema Mexicana
- 1/2 cup Cacique® Queso Cotija

HOW TO MAKE IT
- Preheat a cast-iron grill pan over medium-high heat. Once pan is hot, place the watermelon slice down and let it grill until grill marks are formed (about 4-5 minutes). Use tongs or a large spatula to flip the watermelon slice and let it grill for another 4-5 minutes. Remove watermelon to a cutting board or large plate and let rest for about 5-7 minutes.
- Top with salami and basil leaves, drizzle with Cacique® Crema Mexicana and sprinkle on the Cacique® Queso Cotija. Cut watermelon into 8 slices. Cut a small opening in the rind by piercing with the tip of a pairing knife and insert a Popsicle stick. Serve and enjoy!
