MEXICAN GREEN GODDESS
WHAT YOU NEED
- 2 tablespoons milk, plus more as needed
- 1⁄2 cup Cacique Crema Mexicana
- 1⁄2 cup mayonnaise
- 1⁄2 of a ripe avocado, cut into chunks
- Juice of 1 large lemon (3 to 4 tablespoons)
- 1⁄4 cup loosely packed cilantro leaves
- 1⁄4 cup loosely packed parsley leaves
- 1⁄4 cup loosely packed chopped chives 1 small garlic clove, roughly chopped
- 1⁄2 teaspoon freshly ground black pepper
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon cumin
HOW TO MAKE IT
- Put all the ingredients in a blender in the order listed. Pulse to make a smooth puree, adding a bit more milk if needed to help the mixture process, but don’t make it runny. This dressing should be thick.
