CHILE CON QUESO WITH ANAHEIM CHILES AND CHORIZO
WHAT YOU NEED
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- ¼ of a 9oz package of Cacique Pork Chorizo
- 2 Anaheim chiles, seeded and diced
- 2 plum tomatoes, diced
- 1 10-ounce package Cacique Oaxaca, shredded or cubed
- 5 ounces (1/2 package) Cacique Queso Quesadilla, shredded
- 1/2 cup milk
- Tortilla chips
HOW TO MAKE IT
- Fry the onions in olive oil over medium heat for 3-4 minutes to soften. Stir in the Chorizo, tomatoes and chiles and cook for 4-5 minutes more until the chorizo is cooked.
- Add cheeses and milk and stir the mixture together until melted and smooth, about 4-5 minutes. Take off the heat, transfer to a serving bowl and serve with tortilla chips.
