Originally started as a one-week celebration in 1968, Hispanic Heritage Month has grown to become an essential way to recognize the countless contributions Hispanic Americans have made to the United States.

Cotija
Named after the town of Cotija, Michoacán, this strong, salty cheese is made with cow's milk by artisan cheese makers living high in the mountains. It's traditionally used as a topping or mixed into sauces and is considered one of Mexico's most recognized cheeses.
Oaxaca
Pronounced [Wuh-HAH-kuh], this semisoft, white artisan cheese is named for the southern Mexican state of Oaxaca. It belongs to the mozzarella family and is made by stretching the curd into long ribbons that are gently wound into a knot. Oaxaca has a mellow, buttery flavor and melts wonderfully.
Panela
This fresh, smooth cheese has its roots in central Mexico where ranchers would strain queso in hand-woven baskets. Panela has a mild flavor and crumbles easily. It's best enjoyed with berry compotes, traditional guava paste or crumbled over savory dishes. It's also delicious sliced and pan seared to enjoy as a snack or as a filling for tacos.
Queso Quesadilla
This rich, melting cheese originated in Sinaloa and areas of what is now Texas. Queso Quesadilla has a mild, creamy flavor and can be used in place of most melting cheeses. It works wonders on burgers, chili cheese fries and stuffed baked potatoes.
